Banana Loaf

3 ripe bananas
5ml bicarbonate of soda
30ml hot milk
125g butter
175g castor sugar
2 extra large eggs
225g flour sifted
5ml baking powder
Preheat the oven to 180°C and line a 1kg loaf tin. Mash the bananas in a mixing bowl using an electric mixer. Dissolve the bicarbonate of soda in hot milk and mix with the bananas.
Add the butter, castor sugar, eggs, sifted flour and baking powder, and beat well for 2 minutes until thoroughly combined.
Pour the mixture into the prepared loaf tin and bake for 1 hour and 15 minutes, until the loaf has risen and a skewer inserted into the center comes out clean.
Turn out onto a wire rack and leave to cool.
