Chocolate Sponge Cake

½ cup cocoa powder
½ cup oil
1 cup boiling water
6 eggs separated
2 cups sugar
2 cups flour
4 tsp baking powder
In a bowl, whisk together the cocoa, oil and water. Set aside. Whisk the egg whites and sugar until thick and fluffy.
Add the egg yolks and whisk. Add the dry ingredients and slowly pour in the cocoa mixture while whisking. Pour the batter into a prepared baking dish and bake at 180°c for 25 to 30 minutes (depending on the oven check at the 20-minute mark).
Remove from the oven and allow it to cool. Sandwich with buttercream, pour on chocolate ganache or any other toppings of your choice.
