Coconut Biscuits.

125g soft butter
1 cup icing sugar (make a packed cup)
2 tsp oil
2 eggs
½ tsp vanilla essence
1½ tsp baking powder
1¼ cup dessicated coconut
½ cup cornflour
+/- 2 cups flour
100 and 1000s sweets
Beat the butter and icing sugar until pale.
Add the oil, vanilla essence and 1 egg at a time until light and fluffy, and fully combined.
Add the coconut, baking powder and cornflour. Add enough flour to form a soft dough, which is easily rollable. Start with a little at a time.
Roll out small portions of the dough. Make markings with a fork and use a cookie cutter to cut out the desired shapes. Sprinkle with 100s and 1000s.
Place on a baking sheet and bake at 160ºC to 180°C for 15 minutes or until lightly golden.
Remove from the oven and allow to cool.
