Peppermint Ice Cream Cake

150g Tennis Biscuits
60g butter
250g Caramel Treat
1 tsp vanilla paste
500ml whipping cream
2 Peppermint Crisp, roughly chopped
80g chocolate
60ml cream
Crush the biscuits in a food processor and add the melted butter.
Layer a springform pan with the mixture and place in a freezer to set. Place the Caramel Treat with the vanilla paste in a bowl. Whisk briefly to combine.
Add the cream and beat until thick. Add half the Peppermint Crisp. Layer the mixture over the biscuits and smoothen. Keep in the freezer overnight.
Heat the fresh cream and mix into the chocolate. Pour over the ice cream and sprinkle over the remaining Peppermint Crisp.
