Snowballs
The cake:
¾ cup butter/margarine
3 tbs oil
1 tbs vanilla essence
1½ cups sugar
4 eggs
2½ cups flour
2½ tsp baking powder
½ tsp salt
1¼ cup milk
Mix the flour, baking powder and salt in a bowl. Set aside.
To the mixer bowl, add the butter, oil, vanilla and sugar. Beat until they are fluffy and white.
Add the eggs one at a time, mixing between each addition. Add half of the dry ingredients followed by all the milk and the rest of the dry ingredients. Mix thoroughly until fully combined.
Spoon the mixture into a cupcake or snowball tray, and bake at 160ºC to 180°C for 10 to 15 minutes. Insert a skewer. If it comes out clean, remove the cakes from the oven.
Syrup:
1 cup sugar
1 cup water
1 tbs jam
red food colouring
Boil all the ingredients until sticky.
Remove from the heat and cool.
Dip each cake into the syrup and then cover in coconut.
Sandwich the cakes with cream and jam. Serve with your favourite hot beverage.
