Easter Rice Krispie Treats

80g butter
200g marshmallows
1 tsp vanilla extract
100g Rice Krispies
200g milk chocolate, melted
125g speckled eggs, roughly chopped
sprinkles, optional
Line a 20×20cm baking pan with baking paper. Set aside.
Add the melted butter to a microwave-safe bowl, and add the marshmallows. Once melted, microwave at 1-minute intervals, mixing until melted.
Stir in the vanilla extract. Fold in the cereal. The grain must be generously coated with the marshmallow mixture. Transfer the mixture to the prepared pan.
Use a rubber spatula to gently spread the mixture on the pan. Top with melted chocolate, and decorate with speckled eggs and sprinkles.
Set the Rice Krispie treats for at least 1 hour at room temperature or until the chocolate has hardened. Slice into squares.
