Chocolate Coconut Biscuits

250g butter
¾ cup sugar
2 cups coconut
2 tsp baking powder
1 – 2 cups flour (as required)
2 tbs cocoa
Beat the butter and sugar until light and creamy. Add the coconut and beat lightly. Sift in the dry ingredients and add to the mixture. Form a soft dough and flatten on to a greased oven tray, or roll out and cut into desired shapes.
Bake at 160ºC for 15 to 20 minutes or until crisp. When cool, spread over with melted chocolate and a sprinkle of mint chocolate or Aero chocolate.
Variations: add chopped almonds or pecans to the biscuit dough.
