Dubai Viral Chocolate Cake

4 eggs
1 cup castor sugar
1¼ cups flour
3 tsp baking powder
2 tbs cocoa
½ cup oil
1 tsp vanilla essence
½ cup of boiling water
Toppings:
milk chocolate
pistachio paste
toasted kunefe
pistachios
Combine the oil and water. Allow to cool. Beat the eggs and sugar until light and creamy. Fold in the dry ingredients.
Add the oil and water mixture. Beat well. Bake at 180ºC for 20 minutes.
Toppings:
Melt 2 slabs milk chocolate. Add enough cream for a preferred consistency. Melt a few tablespoons pistachio paste. Toast ¼ cup kunefe. Combine the pistachio paste with the kunefe.
To assemble: Slit the cake in half and fill with the pistachio/kunefe filling. Top with chocolate and pistachios.
