Hot Chocolate

60ml full cream milk
1 tsp Maizena
100g good quality dark chocolate, chopped
2 tbs sugar
2½ tbs cocoa powder
250ml full cream milk
whipped cream to serve
chocolate shavings to serve
In a small bowl, whisk the 60ml milk with the Maizena until smooth, and set aside. Add the milk to a small saucepan on medium heat, and bring to a gentle simmer.
Add the Maizena mixture and whisk until combined. Add the cocoa powder and sugar, and whisk until combined. Add the chocolate pieces to the pan, and whisk until the chocolate has melted.
Whisk for a further 2 minutes. Remove the pan from the heat and serve immediately with a dollop of fresh cream and your favourite chocolate shavings.
