Cinnamon Pancakes

1 cup (250ml) flour

1 tsp (5ml) baking powder

a pinch of salt

½ cup (125ml) milk

1 egg

1 cup (250ml) water

cinnamon

sugar

Golden Syrup

whipped cream

fruit

Method

Add the flour, sugar, salt and baking powder into a bowl, and mix. Make a well in the centre and add the milk, water and egg.

Whisk together until smooth. There should be no lumps.

Heat a teaspoon of oil in a frying pan and fry a ladle-full of the mixture at a time. Once it bubbles, flip over and cook on the other side. Remove to a plate.

Sprinkle sugar and cinnamon on each pancake and roll. Drizzle with Golden Syrup and more cinnamon. Enjoy while warm. Serve with cream or fresh fruit.
