Portuguese Orange Cake

1½ cups flour
2 tsp baking powder
¼ tsp salt
grated zest of 2 oranges
4 eggs
1¼ cups sugar
1 cup fresh orange juice
1 cup butter, melted
1 tsp vanilla essence
Preheat the oven to 180°C. In a bowl, combine the flour, baking powder, salt and orange zest.
In a separate bowl, combine the eggs and sugar. Beat for 3 minutes with an electric beater until pale and fluffy, and the mixture falls in ribbons.
Add the orange juice, vanilla essence and melted butter. Stir in until well combined. Add the dry ingredients and stir until just combined.
The mixture will froth a little.
Pour into a greased cake tin. Bake until the edges are brown. Allow to cool and dust with icing sugar.
