Chicken Tikka

4 chicken pieces of your choice

½ cup Maas

2 tsp red chilli flakes

1 tsp Kashmiri masala

salt to taste

¼ tsp turmeric

½ tsp dhania/jeera powder

½ tsp garam masala

½ tsp chaat masala

¼ tsp ginger powder

¼ tsp clove powder

1 tbs lemon juice 

1 tsp ginger/garlic paste

red food colouring

Sauce:

leftover marinade

1 tbs butter

2 tbs chilli sauce

1 tsp sweet chilli sauce

Method

Wash and score the chicken pieces and allow to drain. In a bowl, mix together the rest of the ingredients. Add the chicken and marinate.

Preheat the oven. Place the chicken on a baking tray and bake at 180ºC for 25 minutes (turning halfway).

In a saucepan, heat the remainder of the marinade with butter and the sauces. When the chicken is cooked, baste generously with the marinade and grill in the oven for 5 minutes. Pour the extra marinade over the chicken. Garnish and serve.
